When life gives you lemons...

.............make lemonade. The usual and cliche sentence we always hear. When you go in depth, the meaning actually means a lot in life. It means that when bad stuff happens, try to make the best of it. When sour things (lemons) happen to you, make them sweet (lemonade). However, I still prefer this - When life gives you lemons, squirt them into people's eye. What to do when life gives you cinnamon? Make cinnamon rolls, cinnamon bread, spice up cinnamon cookies, cinnamon sticky buns, just anything! I chose cinnamon waffles.
If you have a waffle iron in your kitchen, please don't let it go to waste. Get your lazy bum up and make a hearty breakfast or even brunch.

I made these light and fluffy cinnamon waffles on a beautiful Saturday morning. You can actually skip the maple syrup and still taste as good.

Ingredients:
2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
2 teaspoon cinnamon

Directions:

1.) Preheat waffle iron. Combine sugar and cinnamon, set aside. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar mixture, baking powder, salt and vanilla, just until smooth.

2.) Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

    Paired up the cinnamon waffles with a yellow label tea from Lipton. Perfect and decent breakfast to start the day right. Every mouth of the waffles is a full indulgence of cinnamon sweetness which tingles your taste buds. Do try to make them, you won't regret. 2 more days till I return back to school.....
