The oldies - Croque Madame Muffin

I don't know if it is still appropriate to post things taken last year because its way back in May. It still holds a certain feeling for the morning and hence embracing the early birds to continue that ritual. Eggs in general became one of my must-haves when it comes to breakfast and its the most versatile ingredient. The egg yolk is disguistingly delicious accompanied with egg whites. A combination with cheese and ham make sparks fly. Okay okay too much. Make it and you will understand how I feel.










Croque Madame Muffins

What you need:

A muffin tin
Slices of bread (depends on how much you eat)
Number of eggs  (depends on how much you eat)
2 slices of your favourite cheese
Chopped parsley
Salt & Ground black pepper

Preheat oven to about 170°C.
Push bread slices into individual muffin holes.
Add cheese into the holes and you may even have additional ham/bacon/greens.
Crack an egg to each hole.
Bring to bake for approx 10 mins or till egg comes together.
End off by sprinkling with parsley, pepper and salt.
Serve warm.
