We are back again with our second Brunch series, 你 BRUNCH 吗? Apart from keeping the bacon, smoked salmon, and eggs in our plates, we changed the rest of the ingredients. I suggest making the ones that are more time-consuming first, like the quiche/pie dish. Believe it or not, we made Brunch before heading to the Salon and nearly had food coma while getting a haircut, not a very good idea to have Brunch just before long appointments.
French toast baguettes
Fresh Baguette from local bakery, 4 slices
2 eggs
80ml milk
30ml cream
1 tbsp condensed milk
1 tbsp sugar
Butter for frying
1. Slice baguette diagonally into 4 pieces. (Psssst, we do not have a bread knife and used a cutlery knife instead. Do not try to even think about it, it was a total mess. We nearly died trying.)
2. Beat eggs, milk, cream, condensed milk and sugar in a bowl.
3. Soak sliced baguettes into egg mixture.
4. Heat up frying up and place in butter.
5. Fry baguette till both sides golden brown.
Bacon
Frying bacon is a pain in the ass.
You either get scorched by the oil splatter or end up having a burnt bacon, which doesn't taste that bad.
It requires your constant presence of flipping the bacon.
Ham & Broccoli Quiche
We cheated and used a pre-made pie crust.
1 pre-made crust
2 slices of ham
1/2 of a Broccoli
50ml milk
100ml cream
1 egg
1 egg yolk
1/2 of a onion
(Note: We used mini pie dishes hence ended up with 2 pie dishes. However, the ingredients are enough for 1 quiche pan. Since we used pie dishes, the baking time is eventually longer than the ones stated below. )
1. Thaw frozen pie crust.
2. Using a baking pin, roll crust to about 0.3cm thick.
3. Place crust over a pie dish/pan and trim off excess.
4. Poke the bottom of the crust with holes and chill in fridge for 10mins.
5. Cover pie dish/quiche pan with aluminium foil and fill with baking beans to prevent bumpy crust.
6. Bake for 15mins under 180 degrees celsius.
7. Remove beans and foil, bake again for 15mins.
8. While waiting, cut up ingredients into small cubes.
9. Place chopped ingredients into baked crust. Mix milk, cream, eggs together and pour in as well.
10. Finish up with salt and pepper sprinkled over the top. Bake for 30mins under 180 degrees celsius and enjoy!

We learnt that being patient with food (esp. bacon) is the key reason to good food, and I think it can be applied everytime we cook for someone, or even ourselves.
