This recipe is probably the healthiest one to combat any oily food especially doughnuts. Just like a bagel, it has a bread-like texture but with a little saltiness instilled with the dough. We added a twist by combining blueberries, almonds, nutella, basically anything we have. Hence, we conclude that this bread is suited for anytime of the year and whenever you are craving for a bite. It all started with a basic bread dough but we used a doughnut mould to create quirky shapes. Different from a usual bun shape, we can now savour 'doughnuts' without full fat.
1/4 cup granulated sugar
1 cup warm milk (50degrees celcius)
1 tbsp yeast
1 tsp salt
1 tsp vanilla extract
2 1/2- 3 1/2 cup all-purpose flour
8 tbsp unsalted butter, rtp and cut into cubes
4 tbsp unsalted butter, melted, used for dipping doughnuts
A pinch of cinnamon
1. Mix egg and sugar till smooth. Gradually add in warm milk, yeast, salt and vanilla extract. Continue to mix after each addition. Add in 2 cups flour, then slowly combine butter cubes and mix until everything is incorporated. Lastly, add in more flour whereby the dough comes together without sticking to your hand.
2. On a clean counter top, flour the surface and knead the dough for about 5-7 minutes. It should present a smooth surface.
3. Oil a bowl and place dough into it, cover with a damp cloth. Allow it to proof for an hour or so, till double the size.
4. Preheat oven at 200 degrees celcius.
5. Remove dough from bowl and punch dough down to remove air bubbles. Roll the dough until it reaches 1.5 inches thick and use a dough cutter to produce quirky round shapes. Place them on baking sheets with 2-3 inches apart, and leave it to proof for another 1 hour.
6. Bake them for 10-20mins. When warm enough to eat, dip the surface of not-your-typical-doughnut with melted butter and sprinkle over cinnamon & sugar.
